Chef Nelly

After becoming the French-speaking Keto reference, Nelly Genisson decided to settle in Boulder, Colorado-USA and offer her unique expertise to the US market.

As a food lover and Keto Ambassador since 2013, she has developed a strong Keto expertise enhanced by her French cuisine knowledge.

Chef Nelly manages a wide range of services bringing together her talents from recipe creations to culinary classes and food photography. 

Her signature know-how ?

Diabetic-friendly, ketogenic, low-carb, sugar-free and gluten-free pastries with a French twist :

  • « Petits gâteaux » : Madeleines, financiers, sablés, Macarons de Provence
  • French and fine deserts for patisserie : Fraisier, Royal Chocolat, Tarte aux pommes de Normandie

Day after day, she creates Keto versions of traditional recipes, using the most innovative Keto ingredients.

Culinary schools in France

Nelly has attended in the past seven years classical culinary training at Ducasse School, the Lenôtre School and Valrhona’s School of Chocolate and developed proprietary recipes adapting the classical French formulas to a low-carb diet (without cake flour and sugar).

Despite initial difficulties to marry French cuisine and the Ketogenic diet, she persevered until success.

She now offers all of her experience to Eatfat2befit Consulting clients.

Learning from French Chefs

Nelly has met the most talented French Chefs to learn their secrets. 

Exchangind her experience with Chef Olivier Roellinger (Relais et Chateaux’s Vice President worlwide and 3 Michelin stars Chef) and the famous pastry Chef Philippe Conticini, allowed Nelly to reach for excellence !

A Chef behind the camera

Food photography (from creating unique props to the final photo-editing) appeared to be a natural skill for Nelly. 
Thanks to workshops in Paris and personal training, she has developed her own food photographic style with two main values: natural light and real food !
